MACCHIATO

I would say it is rustic Italy from 60's or would call it a food studio with an ambiance of it's own but manoj rai loves to call it  :-

WIYP :- Macchiato is an Italian word, meaning "marked" or "stained". so what made you come out with this consept , is it that you like this perticular coffie and then you hit out with it ?

manoj rai ;- not exactly, we started thinking about this consept a year back and i started with one of the biggest dine in resturant in india but since i was very clear that the day i will open up my own resturant i will not open a finedine resturant but will go with this one because in that way you make it cozy and comfirtable for every group of people. we were trying t o call it italia initially. early in the morning in one of the casual talks we got the name because in italy coffie
is a big thing and cultre in india is getting big now. we call it macchiato bcause it is a well known coffie in the world but it has still catching base in india. stores like starbucs or any good cafe store you will get Macchiato but not exactly what you get in italy.so Macchiato means a coffie with little milk .  if we talk about food  in this resturant will be as good as food in 5star hotel you can think of. we have chosed the finest menu in india to give you all a great taste. our menu contains every authenticity of italian food with spices imported from there as dont want to compromise with the quality. we have best coffee and best coffie beans and best blend of coffee and you will be able to see it. 

WIYP :- what made you come to navi mumbai , you could have opened it in town or bandra ?

manoj rai ;- as a business man i could have done that but i am not a business man so i thought lets creat a wow. as navi mumbai is a very planed city and now people from mumbai are moving to navi mumbai.. i have been to from vashi to belapur to panvel but  i am  yet to see a good resturant with good n healthy food.and due to being good location and seeing peopels
spending power we just have to go and tell them about good food. in Macchiato tag line is come eat and learn more. its not about pizza pasta and soup but it is more for people to combine learn and see.

WIYP :- whats makes you combine pizza pasta and soup together?

manoj rai ;- when you do a menu and every cooking that you take has a  hedding that goes everywhere. so you got soup that  is called zippa. and its not only soup and salaids  but it is about hot cold soup salids pasta resoto , pizza and home made pasta. we are not looking at spegati but we are looking at some unique pastas like revoli, greloti, caprini & capilicy and
best part is they are all home made.we have kept veg and nonveg options for all types of people walking in with multiple options to choose from.   

WIYP :- what made you arrange menu price wise as your food is equivlent to 5 star?

manoj rai ;- in india biggest living community is middle class and how many of them can afford to go to a 5 star hotel. if i have to eat a good 5star hotel food i have to go to a 5 star holtel or a big brand resturant where i am spending big money for it.  if a middle class family wants to eat a good food we are thinking of giving them great and authentic meal with awsome experince.. as people should be able to afford a wonderfull and lip smaking meal .

WIYP :- is your kitchen going to be open for those who would like to see how it is made and thank the sheff?

manoj rai ;-  exactly as we have 2 kitchens one is a live kitchen so all is visible. we have some nice woodfab pizza and some nice bread on table .. our kitchen is as clean as any one can have . we are also intending to do a lot of workshop for ladies so that they can learn the are of all types of food as we have well trained chefs. 

WIYP :- your future expectations ?

manoj rai ;-   from 1st of dec we are open for the guests and yes we have to see the croud and the turn over, also take this quzine to there lavel. once achived we have a big plan to open one more resturant and maybe multiple resturants and we are looking b cities ans c cities very clearly . they should come and try our food. and this is all about. it is an Italian company who has first time chosen an indian chef for this purpose and invested there money. we are two partners one of them is my school time friend. we have our own wine company in Venice in  Italy so we will not use any another wine. you will find our on wine in any of our future ventures.

THIS IS FIRST COMPANY IN INDIA WHERE AN ITALIAN FIRM HAS INVESTED THERE MONEY ON AN INDIAN SHEFF TO COOK SUCH LIP SMAKING
MEALS.

WIYP :- tell me about your entrence ?

manoj rai ;-   it has been designed by very famious art director of bolywood krishna sharma . and he has done my fassad. the interior has been done by ankur best f&b interior designer in india.

WIYP :- why krishana sharma and not upcoming young blood designers or some one fro italy ?

manoj rai ;- for me i have got best from italy but being my first resturAnt gave me a thought of geting it designed by anindian. cause i didnt want to loose or leave anything missing to create a wow factor. i really appriciate their efforts as it helps me to carry my brand arround.





THE LIGHTING  

WIYP :- your ambince matches rustic italy from 60's what's it all about ?


manoj rai ;- i always thought when i will have my own resturant it will be very unique . you know a caffe word comes from italy and is is called tatturia. tatturia pizzaria in home town small resturants. when i go to a 5 star type restorant i am not comfertable there as it is so fine and you have to be so cultured with your eating and behaviour.  our place is rustic so no need to be so highly culnary cultured as it feals like your own home. we have done a lot of r&d  before we opened this resturant. we hired one of the best designer in india so before people can get there food and drinks the they say wow what a resturant...so if you see the lightning the glass ware and cutlary even the intrent and the ideao of the  
stachu. every thing has been taken off so specifically that people should get kind of usp that carries a brand with them  as an xeprince when they come for first time.
